Your must have grocery items??

Im going grocery shopping tonight and Im getting tired of eating the same things- eggs, cheese, bacon, chicken, basic fruits, basic veggies, almonds.. So what are some of your fave items to add some bang to your meals? Im reading alot about cocunut oil (what do u put it in?) and unsalted butter (what is that?) also any interesting receipes you have up your sleeve would really help me out :-)

    I have been making this:

    Pumpkin Pie Bake

    5 Large Eggs
    1 15 oz can Libby's - 100% Pure Pumpkin
    1.5 tsp Mccormick - Pumpkin Pie Spice
    1 tsp Vanilla extract - Imitation, no alcohol
    1 tsp Cinnamon, ground
    ½ cup Splenda Granulated for Baking (maybe ez sweetz instead? 24 drops)
    8 oz pkg Cream Cheese

    Bake at 350 degrees for 40 minutes or until the inside is set. You can test it with a toothpick Maybe 55 minutes??

    I snack on it most evenings. I love pumpkin though. If you cut it in 12 pieces ( I make in in a 8x8 glass pan) it has 3 net carbs per piece.

    (recipe and directions) It doesn't "feel" like you are just eating more cheese. They are crunchy and very tasty!

    Heavy cream, veges, protein of some sort, butter (salted). I always get a requests for these two recipes!



    Here a recipe for a easy Alfredo sauce:

    1 1/2 - 2 cups of Heavy Cream
    1/2 - 3/4 cup of Grated Parmesan
    2 tbl of butter
    2 tsp or to taste Garlic Powder (some times I use the roasted minced garlic in a jar)
    Salt and pepper to taste
    1/8 tsp of freshly ground nutmeg
    2 cups of roasted chicken (I cheat when I don't have time and bring home one already cooked from the store)


    Add cream and butter to a sauce pan (I use a 12" high walled skillet) and bring to a gentle boil.

    Reduce heat to a simmer. Add everything but the chicken and reduce until it coats the back of a wooden spoon. Add chicken (I serve it after the chicken has in the sauce for about 10 minutes or so).

    Serve over Sp. squash or broccoli or just about anything you like.

    This sauce also works well with lump crab.




    Pork Tenderloin Cream Sauce:

    8-10 oz Pork Tenderloin sliced ¼” thickness and then cut each slice in two.
    4 oz Cream Cheese softened
    4 tbl of Butter
    1 cup of Heavy Cream or more if ya like
    1 tbl of EVOO (Extra Virgin Olive Oil)
    1 Leek sliced
    1 cup of frozen mixed Bell Peppers
    Garlic powder to taste
    Bacon salt to taste or Sea Salt
    Pepper to taste
    Creole seasoning to taste

    Add EVOO to a large fry pan. Add slice Pork and cook until slightly brown on both sides.

    Add Butter and Cream Cheese and stir until melted. Add Leeks and Bell Peppers and the Heavy Cream.

    Add seasonings and cook until thick and creamy.

    Serve over any Low Carb noodles (i.e. - Spaghetti Squash, shiratake noodles).


    This makes a very tastey sauce!!!

    At the moment I am obsessed with pork shoulder. There's Jamie Oliver recipe where you roast it for 6 hours; the fat is crispy on top and then meltingly soft underneath. I'm having it for the third time tonight. It lasts me a few days so despite being £6 or £7 a throw it's pretty good value too.

    I have one in the fridge right now! It's the 3rd one I have made in the past 10 days. My hubby and mom (lives with us) both enjoy it too and they are not dieting. Hope you enjoy!
