Healthier Deserts

So Easter is upon us and like all holidays we want to celebrate and enjoy good food which sometimes means sweets. (Oh who am I kidding. It always means deserts, doesn't it?)
Here is a lighter desert which is good for spring and summer:
Raspberry Trifle
1 5 1/2 pkg instant french vanilla pudding
1 pint whipping cream
2 Tbsp sugar
1 tsp vanilla
2 pints berries, your choice (I make this for fourth of July and use blueberries, strawberries and raspberries for red, white and blue)
1 lb. jay seedless raspberry preserves
1 lb angel food cake
Prepare pudding according to package directions. Whip cream until soft peaks form. Add sugar and vanilla, whip until stiff but not dry. Fold half of cream into pudding. Warm preserves until slightly liquid but not hot. Pull angel food cake into bite sized pieces. Place half cake into deep glass bowl. Pour half preserves over cake. Sprinkle with half berries. Cover with remaining pudding. Repeat cake, preserves, berries, then top with remaining cream. Decorate with berries on top. Chill.

I'm not sure the calorie break down on this. I received this recipe from a professional chef.
My guys love this and don't feel deprived if I serve this instead of a heavier cake or pie for dessert. It's festive enough looking to take to a party and everyone seems to enjoy it.0 -

My standby favorite is a sugar-free pudding parfait cups.
It's pretty simple - I use the disposable 8 oz short, clear plastic cups that can easily be transported in a cupcake pan or cake pan. Anyway, the bottom layer is 1/4 cup of pudding flavor of choice, the next layer is 2 TBSP Cool Whip, then add fruit (berries, banana slices, etc.) if it goes with your pudding flavor, then the next layer is another 1/4 cup of a different pudding flavor. Top it with a teaspoon of cool whip and either chocolate shaving (very sparing), sprig of mint, a single berry, etc. Depending on the fillers and pudding types - it'll still come in right around 100 calories for each serving.
Anyway, that's what I do.

Oh, thank you Kathy! I haven't learned how to break down a recipe into the nutritional values yet.
Hubby and sons are already asking for this dessert for Easter Sunday. Now I'll have a better idea of what to put into my fitness pal. I see there is a place to add recipes so guess I'll learn something new. :-)0 -
Thank you Lucy! This is great! I have a sweet tooth but hubby's is three times as bad. And if we are out of cookies there is "no food in this house". lol
