I was really in the mood for a Quesadilla and discovered that if I lightly spray a flour tortilla with non-stick cooking spray on both sides, it will brown and crisp up in a non-stick skillet. I crisped one side, flipped it and then added my ingredients over half the tortilla and then folded it over. OMG - it was yummy and satisfying. Here's what I put in mine, but I'm sure the possibilities are endless:

3 slices Oscar Mayer - *Delifresh Rotisserie Seasoned Chicken Breast
1/2 slice Alpine Lace - 25% Reduced Fat Swiss Cheese
1 Aldi Benita - Flour Tortilla, 1 tortilla (120 cals)
1 oz. Mt. Olive - Hot Banana Pepper Rings
Total: 215 cals - 29 carbs 15 protein

    Makes 12 servings

    This recipe was created by accident when I neglected to add the stick of melted butter I left sitting in the microwave. The end result - no one missed it! I then experimented with adding healthier grains and egg substitute and it just got better and better. The entire recipe only contains 8 grams of healthy fat which comes from the wheat, oats and bananas. The recipe comes out so moist, you won't believe there's no added fat.

    Preheat oven to 350 degrees for bread or 375 for muffins.
    Spray non-stick loaf pan or 12-cup muffin tin with nonstick spray. Set aside.

    Ingredients
    1 cup(s) whole wheat flour
    1/2 cup(s) uncooked old fashioned oats

    1/2 cup(s) Food for Life Organic Ezekiel 4:9 Cereal, Golden Flax
    *NOTE: You can get creative with this 1/2 cup ingredient - if I have a whole grain cereal in the pantry, I'll use it (doesn't have to be Ezekiel) otherwise, I'll add another 1/2 cup of whole wheat flour

    2 tsp baking powder
    1 tsp baking soda
    1/8 tsp table salt
    1/4 cup(s) fat-free egg substitute
    5 large banana(s)
    1/2 cup Stevia in the Raw (you could also use 1/2 cup Sugar in the Raw Turbinado Sugar if you don't like Stevia or a combination of both)

    Instructions:
    Combine flour, cereal, uncooked oats, baking powder, baking soda, and salt in a bowl and set aside.

    In a separate bowl, mash bananas and add sugar and egg substitute. Mix well.

    Add to flour mixture and mix until just combined.

    Pour prepared batter in loaf pan or fill muffin slots about 2/3 full making 12 muffins. Bake until toothpick inserted in center comes out clean. For banana bread: 55-60 minutes; muffins: 20-22 minutes.

    Mediterrean Tofu - Serves 4

    14 ounces MORI-NU, Tofu, silken, lite extra firm
    3 tablespoons Basil Pesto
    1 tablespoon olive oil
    4 cloves garlic, thinly sliced
    14 ounces Diced Tomatoes, can, drained
    10 Kalamata Olives, pitted and chopped
    3 ounces Artichoke Hearts, quartered and drained
    2 tablespoon tomato paste
    3 tablespoons capers
    ¼ cup Parmigianno-Reggiano Cheese
    ¼ cup white wine
    2 teaspoons Balsamic Vinegar
    ¼ cup basil leaves, thinly sliced

    1. Preheat oven to 400F. Line a large rimmed baking sheet with nonstick foil or spray with cooking spray. Cut Tofu lengthwise into 4 1-inch thick slices. Place tofu on several layers of paper towel. Place several more layers on top and place a heavy pan onto the paper towels. Press and drain for 10 minutes. Uncover and transfer to baking sheet. Spread tops evenly with pesto. Bake until browned, 15 minutes.
    2. Meanwhile, heat olive oil in large non stick skillet over medium heat. Add garlic and stir until fragrant, about 60 seconds. Add tomatoes, artichokes, olives, capers, wine and tomato paste. Stir until well mixed and cook about 10 minutes, stirring occasionally.
    3. Transfer cooked tofu to serving platter and top with Parmigianno-Reggiano Cheese. Top evenly with tomato mixture. Sprinkle with Balsamic Vinegar and basil leaves.
