Rich Dark Chocolate Mousse

Ingredients
1 envelope unflavored gelatin
1/4 cup cold water
1/3 cup boiling water
7-8 sugar Substitutes (I use the blue ones)
2/3 cup HERSHEY'S SPECIAL DARK Cocoa
2 cups (1 pt.)cold whipping cream
2 teaspoons vanilla extract
Directions
Sprinkle gelatin over cold water in small bowl; let stand 2 minutes to soften. Add boiling water; stir until gelatin is completely dissolved and mixture is clear. Cool slightly.
Combine sugar substitute and cocoa in large bowl; add whipping cream and vanilla. Beat on medium speed of mixer, scraping bottom of bowl occasionally, until mixture is stiff. Pour in gelatin mixture; beat until well blended. Spoon into dessert dishes.
Refrigerate at least 30 minutes. Store covered in refrigerator. 8 servings.
for anyone who wants to know the carbs this is what I figure but I could be wrong
The cocoa has 3g of carbs per tbsp. but 2g of fiber so it has 11 carbs
The heavy whipping cream has about 12 carbs
The sugar substitute has about 8 carbs (I normally do not count my sugar substitues)
So if I am calculating right it has just under 4 carbs a serving for 8 servings

Sounds yummy! I am lazy, so I just soften 2 oz cream cheese then mix in 1/2 to 1 teaspoon of cocoa and a couple drops of EZ Sweetz liquid spenda (could use packets, drops have zero carbs). It is delicious, if you like cream cheese! Tastes like a mousse. And it has only 2 carbs.0

I just tried to figure it out & for the whole thing I think it would be 960 calories so if you did the 8 servings about 120 calories a serving. I find it really takes care of my chocolate cravings & since it is so rich I can only eat a little. I do through a bit of rediwhip on top!0
