    Italian Meatballs

    1lb of Lean Ground Beef
    1lb of Ground Italian Sausage
    1 Small Chopped Onion
    1 Garlic Clove chopped finely
    1/4 cup of Parmesan Cheese


    Veggies if desired ( I like to add green pepper to mine)

    Mix all ingredients together, bake on a meatball tray (so the grease drains out) at 350 degrees for 40 minutes or until desired done-ness.


    Top with Spaghetti Sauce (if desired) and Mozzarella Cheese


    Makes approx 12 meatballs, 1 per serving

    Twice Baked Cauliflower Casserole

    Description: This tastes like the filling of twice baked potatoes.

    Ingredients:
    1 head cauliflower ( or 1 frozen bag)
    1/2 C. shredded swiss cheese
    1/2 C. shredded cheddar cheese
    2 T. bacon crumbles ( I use the bottled stuff)
    1/2 stick butter
    1/4 C. sour cream
    1 egg, beaten
    Any spices / herbs. ( I use salt, pepper, garlic powder & chives)
    Shredded cheese for topping

    How To Prepare:
    Cut cauliflower head into quarters, removing any green leaves. Boil in salted water about 10 - 12 minutes, until very soft. Drain well. Put cauliflower back into same pot (that should still be fairly hot). Mash with potato masher / mixer. Add cheeses, bacon, butter, & sour cream. Mix well. Add beaten egg & spices / herbs. Put mixture into casserole & bake 20 minutes. Add cheese for topping, and cook until cheese is melted.

    Number of Servings: approx 6

    Preparation Time: 20 minutes prep - 30 minutes cook

    Cauliflower FAUX-tatoes

    Description: Tastes SO Good

    Ingredients:
    1 bag of steamfresh cauliflower
    1/2 stick of butter
    1/4 cup whipping cream
    1/4 cup sour cream
    3 tbsp minced garlic (I like extra garlic)
    salt and pepper to taste
    (optional)
    1 bag of sharp cheddar cheese

    How To Prepare:
    Steam cauliflower in microwave for 5 minutes.
    Place in flood processor and chop up finely.
    Transfer to mixer and add all ingredients except 1/2 of the bag of sharp cheddar.
    Place in a casserole dish and preheat the oven to 350. Spray dish with PAM and pour mixture in and then top with the rest of the 1/2 sharp chedder cheese. Bake for about 20-30 minutes.


    This and the above casserole are my favs, especially when I'm doing a formal dinner.

    Biscuits - Source: dLife

    Homemade biscuits with a touch of honey.

    Ingredients
    1 cup white all purpose flour
    1 1/2 tsp low sodium baking powder
    1/8 tsp baking soda
    1/8 tsp salt
    2 tbsp margarine
    1/2 cup plain nonfat yogurt
    1 tsp honey

    Directions
    1 Preheat the oven to 425 degrees F. In a small bowl, mix the flour, baking powder, baking soda, and salt; cut in the margarine with a pastry blender or fork until the mixture resembles coarse meal; add the yogurt and honey, stirring just until the dry ingredients are moistened.
    2 Turn the dough onto a floured surface and knead four times. Roll the dough to ½-inch thickness. Cut with a cutter or floured water glass about 2 ½ inches wide; place on an ungreased baking sheet. Bake for 10 minutes, or until golden. Serve while hot.

    Additional Information
    Great recipe when you have the urge for a homemade biscuits.
    I have also done these with added herbs (fresh, chopped rosemary or basil so far) mixed in or with flax seeds sprinkled on, lightly pressed before baking.

    Just posted this elsewhere but it's good enough for moe than one topic...

    Low carb peanut butter cheesecake


    This is by no means an every day food but for special occasions like birthdays or when you just can't go another day without something sweet this will work a treat!

    It's essentially the filling from a Peanut Butter cheesecake so all the creamy yumminess without the guilt.

    Ingredients


    500g full fat cream cheese
    3 eggs
    3 egg yolks
    20g Splenda
    125ml sour cream
    250g smooth sugar free peanut butter

    Double cream and Splenda to serve


    Blend the ingredients until smooth in a liquidiser.
    Pour into a 23cm springform tin and bake at 170deg for 40 mins or until the middle has just stopped wobbling.

    Leave to cool in the tin and transfer to the fridge overnight.

    If you can eat dark chocolate you can make a topping with some of that melted with splenda...I just had a blob of the cream mix and it was uber!

    Aubergine Feta Salad

    1 aubergine
    Olive oil
    1 garlic clove
    1/2 Lemon
    Handful of coriander
    1/3 block of feta
    Salt and pepper

    Cut the aubergine into 1cm think discs and fry in a little olive oil on a hot griddle for 3-4 mins on each side. You will probably need to do this in batches.
    Lay them on a plate and spread a crushed garlic clove over the top
    Squeeze the lemon juice over the top
    Season lightly with salt and pepper
    Crumble the feta on top
    Chop the coriander and sprinkle on top.

    Really good as a lunch for 2 or as a side said for 4.

    Spaghetti and meatballs without the pasta!

    Ingredients:
    Spaghetti Squash
    Tomato Sauce - your choice, i like Prego
    Ground Turkey
    1/2 cup Onions (chopped)
    1/2 cup Green or Red Pepper (chopped)
    1/4 cup Parmesan Cheese
    1/4 Cup low fat mozzarella (optional)
    Garlic
    1/8 cup Bread Crumbs (optional - used to help bind meatball but not necessary)
    1 Egg White
    Salt to taste

    Meatballs:
    Coat the bottom of Glassware or baking pan with a little oil.
    Hand mix Ground Turkey, Onions, Pepper, Garlic, Parmesan Cheese, Bread Crumbs and Egg White in a bowl and form meatballs by rolling ground turkey mixture.
    Place Meatballs in glassware and bake for about 20-30 minutes at 350.

    Once cooked, drain excess oil and add tomato sauce.
    If desired, add mozzarella cheese or more parmesan cheese over sauce and place back in oven until sauce boils or cheese is melted.

    Meanwhile, cut Spaghetti squash in half. Place in microwave for 5-10 minutes (until tender) - it should be easy to scrape with fork.

    Use fork to scoop the squash - it will look like spaghetti. Place meatballs and sauce on top and Enjoy.

    There are so many variations of this recipe but I love that I get the feel of pasta without the calories.

    4oz diced extra lean turkey tenderloin
    1/2 cup red bell peppers
    1 1/3 tsp Mario chopped black olives
    1 tsp teriyaki
    1tbsp pure coconut oil


    Heat oil in sauce pan. Add diced turkey. Add peppers and olives. Cook fully. Then add teriyaki til heated through.

    This is one serving under 300 cals and under 3 net carbs.

    I use this recipe for all sorts of meats. But I also add franks red hot :-)

    I just made this fabulous breakfast casserole this week and I'm so glad I did! So yummy and very low carb. I made the casserole on Sunday and have been taking a slice for breakfast all week. What a time saver in the morning :wink: Putting it together wasn't hard, but it needs to sit for 8 hours or overnight before baking. I've been fighting the hubs and kids off it all week... otherwise it would definitely be gone!

    Ingredients
    1 pound bulk pork sausage
    1 pound ground beef
    1 small onion, chopped
    3/4 cup sliced fresh mushrooms
    1/2 cup chopped green pepper
    1 teaspoon salt
    1/4 teaspoon pepper
    2 tablespoons butter or margarine, melted
    2 cups shredded Cheddar cheese, divided
    12 eggs
    2/3 cup whipping cream

    Directions
    1.In a large skillet, cook the sausage, beef, onion, mushrooms and green pepper over medium heat until meat is no longer pink; drain. Stir in salt and pepper; set aside.

    2.Pour butter into an ungreased 13-in. x 9-in. x 2-in. baking dish. sprinkle with 1 cup cheese. beat eggs; pour over cheese. Top with sausage mixture. Pour the cream over sausage mixture. Sprinkle with remaining cheese. Cover and refrigerate for 8 hours or overnight.

    3.Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325 degrees F for 35-40 minutes or until set. Let stand for 10 minutes before cutting.

    Broccoli and Celeriac Cheese Bake - serves 4-6

    I invented this yesterday with what I happened to have in to accompany fish... it'd work with any veg.


    1 Small Celeriac
    1 large Broccoli Head
    1 tub Philadelphia Cream Cheese
    150ml Double Cream
    2 cloves crushed garlic
    pinch nutmeg
    150g Mozzarella
    2 large handfuls grated cheddar cheese
    salt
    pepper

    preheat oven to 180deg C

    Cut the Celeriac into large dices and boil for 5 mins before adding the broccoli to the boiling water. Continue to boil until completely tender.

    In the meantime combine the cream cheese, cream and garlic in another saucepan and slow heat until the cream cheese has melted. season with nutmeg, salt and pepper. Now add 3/4 of the grated cheddar and stir until melted. Remove from heat.

    Drain the veg, making sure to remove as much water as possible (otherwise it'll leave a watery sauce at the bottom of the dish) and transfer into a baking dish.

    Tear the mozzarella into largeish chunks and disperse throughout the veg.

    Pour the cheese/cream sauce over the top and sprinkle with remaining cheese.

    Bake for 30mins or until cheddar has gone brown and delicious.

    Easy Salmon Cakes

    If you are trying to boost your intake of omega-3s, try this simple favorite. It is a great way to use convenient canned (or leftover) salmon.

    4 servings

    Active Time: 30 minutes
    Total Time: 45 minutes
    Ingredients

    3 teaspoons extra-virgin olive oil, divided
    1 small onion, finely chopped
    1 stalk celery, finely diced
    2 tablespoons chopped fresh parsley
    15 ounces canned salmon, drained, or 1 1/2 cups cooked salmon
    1 large egg, lightly beaten
    1 1/2 teaspoons Dijon mustard
    1 3/4 cups fresh whole-wheat breadcrumbs, (see Tip)
    1/2 teaspoon freshly ground pepper
    1 lemon, cut into wedges

    Preparation

    1 Preheat oven to 450°F. Coat a baking sheet with cooking spray.
    Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and celery; cook, stirring, until softened, about 3 minutes. Stir in parsley; remove from the heat.
    Place salmon in a medium bowl. Flake apart with a fork; remove any bones and skin. Add egg and mustard; mix well. Add the onion mixture, breadcrumbs and pepper; mix well. Shape the mixture into 8 patties, about 2 1/2 inches wide.
    Heat remaining 1 1/2 teaspoons oil in the pan over medium heat. Add 4 patties and cook until the undersides are golden, 2 to 3 minutes. Using a wide spatula, turn them over onto the prepared baking sheet. Repeat with the remaining patties.
    Bake the salmon cakes until golden on top and heated through, 15 to 20 minutes. Meanwhile, prepare Creamy Dill Sauce. Serve salmon cakes with sauce and lemon wedges.

    Tips & Notes

    Make Ahead Tip: Prepare through Step 3. Cover and refrigerate for up to 8 hours.

    Tip: To make fresh breadcrumbs: Trim crusts from firm sandwich bread. Tear the bread into pieces and process in a food processor until coarse crumbs form. One slice makes about 1/3 cup.

    An easy breakfast from dlife.com

    Quiche Minis in a Muffin Tin

    1. Quickly saute a cup of fresh or frozen diced peppers and onions in a little oil.
    2. Whisk together 8 eggs and 1/4 cup of water.
    3. Place one slice of Canadian bacon in the bottom of each well of a muffin tin (assuming 8 wells), and evenly divide veggies among the wells.
    4. Pour the egg mixture over top and bake at 350 degrees F until set.
    5. Sprinkle tops with shredded cheese after they're cooked and leave in oven for another minute to melt.

    Total carbs: about 3g in two quiches

    Variations: Make these minis ahead of time and freeze them. Pop two in the microwave for a quick "to-go" breakfast. Or, add a little chili powder and a spoonful of salsa and some sour cream, and make your minis Mexican.
