Used MFP to calculate what I used to eat

I just started this ketogenic diet and using MFP and have been calculating my meals. It's very helpful. I was wondering what my potassium intake was on what I normally used to eat since it always shows as lower than the daily recommended value and found other interesting things.
The first thing was that I was taking in only about 500-600mg of potassium compared to about 1,500mg now.
The next thing was pretty surprising. My caloric intake was usually right around or under 2,000 calories. Given my height and weight and daily activities, I should be burning about 3,000 calories per day. My fat intake was normal as well. I should have been losing weight, right? Instead, I've been staying at the same weight. Looking at my average carbohydrates, however, I was taking in about 200-300mg per day.
Given the info I found, I'm extra glad that I've found this diet. It gives me hope seeing as how that really appears to be what's gotten me to the weight I'm at now and what's prevented me from losing it.

How important is potassium? What foods is it normally in? I've been taking a supplement the past few days, as recommended, but I'm just not sure how much potassium I would have been eating before...or if it matters.0

Potassium is vital, but as little as I was taking in, I've never had any symptoms of a deficiency. I think it's more that it has added benefits at higher levels, but not taking in that amount won't have detrimental effects. It seems to be an ongoing debate from what I've found so far. I'm not as worried about it as I was, anyway. I think it's important to try to take in as much potassium as you can due to the diuretic nature of ketosis in order to replace electrolytes, but not necessarily at 4,700mg per day.0

I get muscle cramps if I'm low in potassium. Thank goodness for Morton's Lite Salt.0
