I try for at least a 1000kcal/day deficit, because I still have ~130lbs to lose, after losing ~70lbs so far. But lately I'm fighting tooth and nail to not fall back into stress eating, so my deficit lately isn't large. To be honest, if I make it through the next three months without gaining, I'll consider it a win.

That sounds the opposite of healthy and sustainable, which is what you need if you're planning on sticking with anything. I'm not punishing myself for my weight. I'm taking care of my body because I love it and I want it to last longer than it would if I didn't lose weight.

Plug your stats into MyFitnessPal, and chose your rate of loss. It'll give you the amount of calories to eat to lose according to that rate.

That's not even 2 weeks. I wouldn't call it a plateau yet, weight fluctuates. You lost 25lbs in what, 6 or 7 weeks? It's normal to have a stall where you don't lose for a while after a loss of such a big amount in such a short amount of time. Give it time.

You don't gain fat if you eat before bed. You may see an increase on the scale, from food waste/water retention/etc, but eating right before bed has no bearing on whether you gain fat or not. Unless you're going over your calories. Also, to the the thread in general: Starvation mode is a myth.
