Skyr with vanilla casein because one can never have too much protein.

Going to call you out and say please provide pics of 210lbs at 6% bodyfat.

Food.

You don't need to eat every few hours. I fast for 16-18hrs a day and my metabolism is just fine.

Speak to a medical professional not an Internet forum.

Calories are king. Many bodybuilders use IF and gain muscle.
-
Sleep helps as it reduced cortisol. However weight loss is ultimately down to a calorie deficit!

I gained 19lbs after a carb up and dropping 12 within 24hrs.

If you can maintain a calorie deficit accounting for you day of eating then go for it. Many people with low maintenance calories find they go over their weekly deficit with a day of haphazard eating.
-
2lbs in a week will be water, food and a bit of fat.
-
I highly highly recommend you go by the mirror/pictures and not set an arbitrary goal. Especially when in a gaining phase!

Curvy is normally used by overweight women to justify their figure. A flat stomach means relatively low bodyfat and/or good bodyfat distribution.

1) Be patient 2) Weigh and log everything you eat and drink 3) "Clean" foods are not a thing

This forum is too much sometimes................

They are good at marketing an elaborate plan to create a calorie deficit and not much else.

You have a lean frame with good proportions to build off but in all honesty I wouldn't step on stage for at least 1-2 years as you lack the overall muscle mass even for men's physique.
-
Aiming for a weight is a way to either end up fat or a skeleton. Focus on building the physique you need and let the mirror dictate what you do.
-
It depends which is the "lesser of 2 evils" for you. Personally I would always advise cutting further first before trying to gain muscle.

Calorie dense foods are your friend. Ice cream, peanut butter, chocolate, fatty cuts of meats, etc.
-
1) Pick things up 2) Put them down
-
Your calorie balance will control your weight, you just need to account for your activity.

Lettuce, cucumber, onion and salsa can be consumed in huge portions for very minimal calories.
