As short as you are and as close as it is to your TDEE, 1200 calories should be far less of a problem for you than it is for women who are taller. I would think that any health issues would be caused by something else.

When I was in college I did quite a bit of walking just getting from class to class. As for eating, you can eat anything and lose weight, but you can't eat a lot of it and lose weight.

If you haven't been losing weight then you don't need to be eating your exercise calories. Most likely, you are eating more than you think you are.

Moderate exercise can aid your immune system. Extreme exercise tends to have the opposite affect. If you are going too hard to fast you may be causing yourself trouble. In general calorie restriction can improve your immune system, but if you are doing it while you are sick it could cause a longer recovery time.

I'm a little concerned that you think 2,000 calories seems high. There are days that I burn 2,000 calories on exercise alone. You should watch the rate at which you are losing weight. 2 lbs per week is aggressive for someone of your weight. If you are losing more than that, you need to eat more.
