Me currently. Have pretty much maintained/cut since last summer.

. This was Jan 2016-March. I had to stop bulking and cut for a wedding I was in. Haven't had a chance to bulk since. Cruise last winter, parents anniversary party a few weeks ago, surgery Tuesday to remove a thyroid, cutting through summer then I'll be bulking like hell this coming up winter.

No matter if you're eating "Healthy", you have to still be in a calorie deficit to lose weight. Only eating once a day, still doesn't mean you're eating in a deficit. You need to figure up how many cals you need for you, then stay at that number. Once you stall, you need to drop a bit, or add more activity.
