where on your knees does it hurt? if it is outer left side of left knee, outer right side of right knee it may be your IT bands... they can get cranky when you start to run a lot. If so, look up exercises to stretch them out and also invest in a foam roller... makes a HUGE difference, also youll need to rest and heal.

I have 2 slices whole wheat toast with 1 laughing cow cheese and I microwave an egg for about 45 seconds (scrambled) - add a little salt - yummy and takes 3 minutes to prepare total! I give myself minimal time to get ready in the morning, so i too need FAST breakfasts!! yummmmmm.

try tofu shirataki noodles - they aren't pasta.. but close. Hungrygirl.com has a fake fettucini alfredo recipe with them, that isn't so bad!
