It seems that you have the money to run tests. Being so underweighted you may go for parasites, food intolerances, gastrointestinal health (digestive enzimes, bacteria and all the crap) and thyroid, but with a good laboratory, you can't find thyroid problems in normal blood tests until is really *kitten* up.

If you buy just dried fruit it is very unlikely to find added sugars, but just get organic and is more easy. A suggestion, watch out the consumption, dried fruit is very small, but the sugar is still there, it is way easy to over eat sugar while consuming dried fruit.

If you want to be fat use your ratios, but temporarily, is too much carbs. Once you get to a more ideal weight keep those numbers but in this order fat/protein/carbs.
