I'm in the same boat with the insulin resistance. I started my first couple of weeks aiming for < 50g per day, but after that I adjusted my goal to < 30 and usually I hit right around 20 unless I go out for a big dinner at which point I still end up only around 30 - 35.

The fat definitely keeps you full, I've very recently switched to just a "bulletproof coffee" for breakfast with coffee, butter, whole heavy cream, MCTs or Coconut oil and a dash of Stevia, and I don't need to eat lunch til 1pm.

My mom has been doing Christmas Eve dinner for a while, and yes there will be rolls, potatoes and other carb nightmare food, there is usually enough stuff there that won't hurt me like turkey, ham, sauerkraut and kielbasa (made without any sugar) sour cream cucumbers, and broccoli with melted cheese.
