I do a farmhouse strata.... You can add meat, veggies, cheese, eggs or egg beaters or egg whites. It is like a crustless quiche. One fourth of a pie tin would only be 350 or so depending on what you put in it and you have breakfast for a couple of days.

Just measure and log it :) Sometimes when I am having a day higher in fats, I use the I can't believe it's not butter spray. So long as you are logging and weighing and accounting for ALL your foods you should use what you like and be just fine.

Good advice above :) Be aware that Cleaning is already accounted for in your regular daily activity unless you are doing something extra strenuous on occasion.
