I don't think more exercise is ever counter productive. Can you shake up what you do a little bit? Add some yoga, pilates or some weights along with running. I don't find them to lose moisture when I roast them...I use whatever the database says by weight. And you remind me, I have a couple of beets to cook. I made a raw beet salad for the first time last week, it was delicious!

I would only be concerned with myself...are you really eating that little? Are you weighing and tracking everything? It's boring but important. For me the scale moves slowly...usually less than half a pound a week at 1200 calories a day. But watching that overall it has a downward trend helps. Good luck!

If you can get fresh veggies...it's pretty easy to dice up some celery, carrots, and onion and then add chicken stock. You could also add some diced chicken and noodles, rice or cous cous if you wanted!

I tend to be a snacker too....especially when home all day. I will take an apple or pear and cut it into really thin slices and leave it in a bowl on the counter. Then when I feel like snacking, I'll just grab a slice or two and enjoy. It will usually last me all day. Snap peas are my other go to snack.

I'm with you...the scale is the ultimate motivator or demotivator. When we don't see success on the scale, working to remember all of our other successes needs to be our motivator! Congratulations on a good week under your belt, I'm thinking you will be rewarded at the scale.
