I usually take the calorie count and then delete my resting calories. I take my BMR and divide that by 24 to figure out how many calories I burn in an hour, just sitting. Then I delete those from the calories burned during an activity. Not sure if this is proper or not, but it seems to make sense to me.

I keep my coffee, but I drink it black, and I grind organic beans. Coffee actually has health benefits!

I think the set numbers for nutrient should be used as guides, but everyone is different. I personally wouldn't worry terribly about going over on sugar from fruit unless you have a health concern.
