Hmm, How did you calculate the calories in the panini and chips? Did you make it yourself and weigh all of the ingredients in grams to log them? Eat whatever you like that helps you stay in a calorie deficit for the day/week. It might take some experimentation to determine what keeps you feeling full - some people feel better with a lot of protein, some like carbs. My diary is open if you want to see how I do it. I have a lot of snacks and chocolate. :)

If your logging is all accurate, you're on the verge of an amazing "whoosh!" If you search the message boards for "whoosh" you'll find a lot of people in the same situation. I'm 5'3" and went from 182 to 135 and had lots of stalls along the way. Stick with it! <3

1500 cal/day just leaves you "constantly snacky" because that's not enough calories for you. 1500 is the bare minimum for men, if you are active at all you should also eat back your exercise calories. It's very possible - BUT - you should eat more than 1200 calories a day. 1200 is the minimum, you should eat at least half of your exercise calories back on top of that. You need to eat more. Women need at least 1200 net calories a day, men 1500, to get adequate nutrition, and more than that for activity/exercise. Is there a reason you're doing OMAD? If you can't eat enough calories in one meal, maybe OMAD isn't a good plan for you. OMAD isn't necessary for weight loss.
