Breakfast: tofu scramble w/veggies, oatmeal with berries and some vegan protein powder, or a smoothie with fruit, veg, nut milk and protein powder. Otherwise: rice with beans, tofu stir-fry, lentil curries, pretty much anything with seitan, legumes, and tofu would be higher protein than those without.

So close. Nutritionally, there's not much difference between frozen and fresh, and depending on season and location, it's possible that the frozen fruit is more nutritious.

Protein is a bit overhyped as to how much we need. If you're eating enough whole foods, it's nearly impossible to not eat enough protein (meaning enough to avoid protein deficiency), as long as you don't prioritize fruit or starchy veg over other vegetables and whole grains.

I always like to give a shout out to True Nutrition when people ask about protein powder. Love their stuff, you can customize your protein powder, and even with shipping it's cheaper for me than anything I can get locally. Plus it tastes better.

Refried beans with tvp and mexican seasoning on toasted corn tortillas.

I have a weekly "taco goop tostadas" night, because it tastes good and is pretty good for you, and also doesn't take too long to make. This serves two, but could scale it however you need to really. - 1 can fat free refried beans - 1/2 cup tvp, reheated in 1/2 cup water - 1 serving Mexican seasoning (I use this recipe,…

I have researched this pretty extensively being vegan. The lower limit for fats for women that I've seen is around 25-30g per day. There are fat soluble vitamins you might have trouble absorbing at lower levels. Also. I believe 10% protein is about the lower limit there, as well. More worryingly, working from the grams of…

I used soylent for a little while as breakfast, when I was too lazy to worry over anything else. It's extremely bland, and for soylent, 400cal/ bottle, which I personally didn't like (prefer a smaller breakfast). To describe the flavor, imagine you took a box of cereal, took the inner bag out of the box, dumped all of the…

If you're interested, your library might have some great recipe books that could expand your repertoire even further. I live in a red state (in a purple area), and my closest library still has 15+ vegan recipe books. I'm glad it's giving you positive health outcomes!

My diet is predominantly carbs, so I don't really have a spike with that. If I eat higher quantity, or much saltier without drinking enough water, the scale will usually show 1-2lbs the next day.

Aside from the speed at which you lose weight, skin only has a certain amount of elasticity. Now, it will generally take a little while to shrink after you've lost weight, but after a year or two it's shrunk all that it will. All that to say, you may have loose skin regardless of how slow or fast you lose weight, based on…

<10% of take home pay for a 2-person house with a dog. It's $600 max a month for everything, with a very occasional overage.

Protein deficiency is almost nonexistent for people that eat enough calories on a varied, plant-based diet.

Matcha by itself is a bit earthy/grassy in flavor. Very nice with a touch of sweetness.

I'm a huge carb addict so I feel good on a 60/20/20 cfp split. The "Standard American Diet" is 50/30/20. Unless you are getting very into fitness, your macro ratios are less important than your calorie total, getting micronutrients and fiber, and feeling good with what you eat.

I love the aldi seedtastic bread... it's pretty high calorie (still <150) but it's got a really nice flavor.

Cabbage, beans, broccoli and oatmeal all come to mind. Most plant foods are pretty high fiber, really.

Time to make and freeze a bunch of baked goods! 1 Tbs flax meal to 3 Tbsp water, soaked for 20+ minutes is an egg replacer in most baked goods (wouldn't do cookies though). You can also add it to oatmeal if that's something you eat. If you look for vegan recipes, you'll likely find some uses for the flax meal, since its a…

The thing that started me moving toward vegetarian and vegan options was straight up the cost both monetarily and calorically of meats. Figuring out that it was cheaper to replace with beans/ tofu/etc was a revelation to me, and it's made me more adventurous with food. I also found out I LOVE chickpeas because of this, and…

I got a fitbit blaze not too long after it came out I believe, and have had no issues with it other than the band slowly stretching (not surprising due to the material, and can be replaced, but not needed to yet). I find the features to be more than I need but lovely all the same, and there are ~quarterly updates to the…

I go light for breakfast because i prefer to have a large meal late in the day to prevent night time snacking... I'm also lazy and don't want to cook anything for breakfast, so mine is a piece of fruit (usually apple) and 2Tbs of powdered peanut butter.

This sounds glorious, I think it would work with pretty much any fish.

Only thing I'd caution with coffee is that brewing without a paper filter can raise cholesterol levels. Source(first I grabbed off Google, I'm sure better sources exist).

I use polyvore almost exclusively to create outfits I want when I lose weight.

I adore tofu now that I know how to cook it. I like it with a marinade of hoisin, soy, red pepper flake, and sugar. Or with mushrooms and cabbage in homemade dumplings. Best place I find it is international markets, you'll have the most options and probably even a bulk deal (dropping it to $0.76/lb in my area). Definitely…

I love tropical smoothie, especially the peanut paradise, so I make my own now for breakfast, with 4.5 T peanut powder, 1 cup original almond milk, and one and a half banana, which I slice and freeze. Love it and it's pretty filling.

I become unhealthily attached to fictional characters and celebrities, but only if they're guys that are bad news.

I'd like to join! I have a work challenge that's similar (next round may even start at the same time), so this will make me accountable in more arenas, which sounds like a good thing to me.
