Isle my own Seitan, low sodium, and absolutely easy and delicious. I ground it, sauté it, slice it and stir fry it. I am Vegan and no more protein issues. Oh o make my wraps with it too. I make eggless "egg salad." Live love love it!

You don't have to eat an entire fruit, you can eat a couple of slices of banana for a yummy topping or berries, apples and pear in your salad. A quarter of a medium pear sliced in a salad is wonderful. Or just a couple of slices. I love using fruit as a "garnish."

I'm happy this challenge is here. I'm visiting my kids and came prepared with my food to stay on track. The binging started. I am nursing bronchial problems so got up not feeling great.
