How else can you tell how much you burn during strength training? Is there a better way?

I wear my Heart rate monitor during strength training. It gives a better estimate.

I recall a sponsor at OA saying that as long as you have the calories leftover it was okay to ear them at off hours. This was when I was working long hours and wanted to snack.
