http://minimalistbaker.com/sweet-potato-chickpea-buddha-bowl/ I am vegan also and I found this recipe last week. I made it twice this week because it was sooo good. Only thing I did different was use cayenne pepper instead of chili powder. It made the chickpeas kind of spicy.
