Pulses/beans are great. I use oil can butter/ghee so the are vegan. Serve on quinoa or amaranth vs rice for more protein.

Make tons of veggie foods Lots of Chinese...in particular Sichuan. Thai. Indian. Can make an endless number that are all different. Of course adding in eggs or milk gives more options. I've posted many pictures and recipes in the past...

My first comment: Stop buying chicken breast and use thighs instead. Only slightly higher in fat, but far tastier and more forgiving when hearing the next day. As for recipes: Countless options. I would turn the avocado into a good guacamole. Garlic, tomato, lime juice and salt. Add chili if you want a kick. a little water will make more liquid if that is what you want.

Yesterday had a typical day A couple of apriums, handful of carrots, couple of cups of watermelon, cup of broccoli, kale and cabbage salad (Taylor Baja), Ceasar salad.....
