I have a heart rate monitor so I know how much I burn. Unfortunately without one youll just have to trust MFP or not enter anything at all!

I am a sucker for salads. Chicken or prawn salads are my favourite with cottage cheese, lettuce and corn (surprisingly great combination and super low calories).

MFP works it out by your height, weight and age. If your machine does all that + measures your heart rate- go by your machine.

Firstly, low carb and high fat diet works for some and doesn't for others. I recommend just sticking to a normal diet of carbs, protein and fats :)
