You may also want to look into the GAPS diet. It is very healing and I think you may be able to eat the foods in it

I would do a side soup that is broth base and a side salad. Otherwise you can eat a veggie dish with rice and add extra exercise for more calories.

I talked to my husband who lived there as a child and he said they often have soft tofu with syrup for dessert. He thinks they have beans there and you should be fine if you cook them yourself.

I count fruit but not nonstarchy veggies.

I am trying to be vegan. I saw Forks Over Knives and it inspired me. For now I am vegan about five days a week. On my good days for breakfast I am having a bowl of diced fruit. For lunch rice noodle soup with lentils and lots of veggies. For dinner a rice bowl with black beans and lots of veggies.

Raspberry leaf tea is good for healing the uterus. You may also want to try a whole foods plant based diet while healing. It has helped me with my periods which where getting closer together.

There is a book called The Warrior Diet that is similar to this. My mom is doing it successfully.

I was also on a plateau but I finally started losing again when I switched my breakfast to only fruit. I make a bowl of diced fruit that is just under 200 calories. I think it is working because it is like a mini fruit cleanse.

I used to make my own water kefir. It is much easier to make than Kombucha and I believe it is better for your digestive system. I like to make it with grape juice for a bubbling grape soda.

I'm not a pro at the weight loss thing but when my kids were a little over one and they could walk around at night and wake me, I put a little mat next to my bed for them. I told them that if they wanted to be with me at night they could sleep next to my bed in the little mat, but not to wake me.
