Just a note on the cheese sauce I posted: be sure to use yellow potatoes, not russets. I've heard the taste is not as good with russet potatoes.

I've never tried it but was excited to see a couple of them for sale at the local Safeway. I live in a very small town and when Albertson's took over Safeway we started to see a lot more vegan-ish items. Yay!

I love pumpkin seeds - it hits the spot that chips would normally hit, that salty crunchy place. It is higher in fat though but it is my guilty pleasure. When I'm really feeling the need for protein I go for peanut butter, usually on toast or some straight up almonds.

I always have corn, fruit and homemade beans in my freezer. Oats, millet, tofu, potatoes are always around too.

Many days it's a smoothie. Often it could be overnight oats or millet. I also make my own granola so that sneaks in sometimes too.
