I did something similar to this. I was at least 8 cups a day. They were rarely full cups because once I was able to gulp the coffee, it was what I considered too cold and I would pour out about 1/3 cup each time. This would happen in about 5-6 sips. There is a selection under cardio called strength training. I use that as a general calorie count. Might not be spot on for most people since it can't tell how intense you're training or how long of rest periods you are taking.

I would keep it totaled as lunch. I eat snacks throughout the day and they get lumped into snacks.

Are you after a specific goal such as losing or gaining weight? I keep track of calories and macros currently because I'm trying to put on some size and it makes it easier to see how much I'm eating and could potentially gain.

I've been doing 45/30/25 for 4 weeks at 2100 calories. I've managed a bulk of about 1/2lb a week. BMI is 23.9 and fat% is 12.9 and I weigh 157lbs. This is my first bulk. I've tried it in coffee. I like the taste but more fat than I'd like to consume since I drink a few cups of coffee a day. I also use it as a moisturizer on my face. So far, it's been the only thing that doesn't make me break out.
