Lol if OP has torn ACL a PT will tell to work on quad and hamstring for coactivation to limit anterior translation of the tibia on the femur. I'm offering a suggestion for what the OP asked. Don't attack me when I'm simply answering what the OP asked.

Work on strengthening the quads and hamstrings. The stronger they get the better they can act as a make shift ACL as you delay surgery. Current PT student

Could be your standing posture. Also a lot of back pain is associated with week core. To stretch back try cat/ camel or low trunk rotation.

220-age is easy standard for finding out what your max HR should be around. So that would be 195. Approaching that just means you are working at a difficult intensity. Is there a specific reason why you want your HR to be at 160??

What was the last thing you posted? YOU ARE SEEING GAINS!! That's the most important part! You have clearly gained muscle which is awesome. Gaining weight is not always a bad thing. Since you are lifting heavy and eating more you are more likely gaining muscle as the weight. Keep it up!

How can you be ok with teaching your child bad habits? Teaching them at a young age to eat unhealthy transitions them to eat bad later on in life. The teacher is doing through right thing and educating your child to a healthier lifestyle.
