Budgetbytes.com is a great website for healthy eating on a budget. The girl that runs it breaks every ingredient down to its costs and even has multiple recipes to make your own commonly used items for cheaper (things like broth and such).

Even though I am neither vegan or vegetarian, I recently picked up the Thug Kitchen cookbook and it is amazing! No meat or animal products used. They have a website with free recipes too - thugkitchen.com. As long as you don't mind some cussing (they really try to make the recipes humorous) it is great!

Though probably not quite as healthy as gauc or plain avocado, it can actually be used in place of butter and less healthy fats in some desserts.
