If you're already a healthy weight, losing 2lbs per week is unrealistic. Recomposition is a great suggestion and you can set your calorie goal to maintain your current weight. I would ask for a Celiac blood test before you are too far away from gluten. It can be hard to get a positive diagnosis after eliminating it. ETA: While gluten intolerance and Celiac have similar treatments, the level of strictness regarding avoidance varies great between the conditions. It's important to know for sure.

I think the only thing you should give up on is your expectations. The 40lbs didn't get there in three weeks, so you shouldn't expect it to come off that quickly. Pick a reasonable deficit (1-1.5lb loss per week goal) and eat to that goal. Repeat. You're only prolonging being overweight by quitting.

I try to make it easy on myself and I consider a "serving" of vegetables to be 100g, I count potatoes and corn as a starch/grain rather than a veg, and aim to get 4-5 100g servings of veg a day.

Definitely wait until after your trip and give it a few months to a year to really settle in and normalize. My daughter also has one. She gets cramping way more than I do. I get some lower back pain at most.
