Unfortunately, the slow cooking destroys a lot of nutritional value along the way, in particular the vitamins. Pressure cookers are a *much* better tool. My family eats a lot of lentils, beans and dry peas. The pressure cooker is wonderful, and doubly so because we live at 6300 feet.

Closing in on 40 years of vegetarian, or more accurately vegan + small amounts of milk products. I don't recommend veganism as a fad or for dieting, but it is a great and ethical lifestyle change.

If correct, then on average (and averages are fine,) an 1000 kCal diet will be 350 kCal protein which is about 90 grams. That is way more than enough. Frankly though, I'd be surprised if you manage 35% of your calories as protein.
