I eat them all the time. They can get watery. I lay them out on a paper towel, lightly salt them and place more paper towels on top. About 15 minutes later I replace the paper towels. I probably end up letting them sit for 30 minutes. Also helps that you have a thicker sauce. Otherwise everything comes out watery.

Fat is 67% of my diet. 27% protein and 6% carbs. A Rude. Low carb or reducing carbs is absolutely sustainable. This is what I ate the last time I went out: Salad with grilled chicken, bacon, avocado, hard boiled egg, blue cheese, tomatoes and a vinaigrette. My diet is up to 67% fat. I am doing fantastic.

Are you specifically trying to eat low carb? Something like Keto focuses on eating protein. Keep carbs pretty low, under 50 grams usually. Then you eat fat as needed to feel full, within a caloric goal. Fat makes you feel full and satisfied. Cutting it out doesn't help weight loss. It hinders it.

I've made it in a food processor and this is what it looks like right before it separates. It tends to take 10-15 minutes in a food processor so 30 minutes by hand is probably not enough. The liquid that releases is buttermilk. Butter is fat. Buttermilk has minimal fat in it. So essentially you are condensing the calories.

I find I only need to worry about potassium if I am having leg cramps or exercise heavily. I replaced using salt with something called lite salt which is half sodium half potassium.

To loose weight you need to burn more calories than you eat. You can accomplish this by using MFP to track what you eat to get an understanding of how much you should be eating a day. Any exercise you can do is great!
