Maximum muscle gain is approximately 2.5lbs every month tops. If you are gaining more weight than this it is fat or water retention. If you are gaining weight, you are in a caloric surplus regardless, meaning you are eating more than you are using every day.

If you are not losing weight on 800-1200 calories, then you are logging inaccurately. It is near impossible to not lose weight with that caloric intake.

Not much I can recommend on the workout plan you have mentioned, but nutrition will be extremely important. Keep in mind that spot-training fat loss is a myth so you'll have to focus on fat loss in general which can be done through a caloric deficit. I started 220 and finished my cut at 190 in a little under 2-months time…

All diet soda I have ever come across is definitely calorie free... Keep in mind other artificial sweeteners have been added to compensate for lost sugars, but you will not gain weight (calories) inherently from drinking diet soda.

That's completely realistic. I dropped 8lbs my first week mainly consisting of waterweight.

You haven't been under your calorie goal, or don't have the correct goal is the issue. If you are truly eating at a caloric deficit then you will always lose weight.
