I weigh myself every morning. We (the scale and I) <3 each other, regardless of the result. I don't get too high or too low, whatever it says. Accountability is the bottom line for me. I don't hide anymore, especially from myself.

Your plan sounds a bit extreme to me. If it's not working, perhaps try something else? 500 calorie days seem extreme if you're doing that on a regular basis.

I log everything, good or bad. Being able to track a generally very positive trend takes the sting away from days in which I choose to go over my calorie goal.

Definitely not into the "giving up" thing. But I agree with CnC. When you get closer to "the end," sometimes it's a good idea to let up a bit on your calorie deficit, since your baseline metabolic rate goes down as you lose weight. It certainly helped make things more "doable" for me.
