Forget counting carbs, count your overall calorie intake and maintain a deficit to lose weight. Restricting your carbs to such a low level is not necessary. You should not be losing more than 2lbs a week on average , this is a healthy rate of loss.

Until you know all the ingredients and the pre-cooked weight it's going to be tough to accurately estimate the cals. If you're going to eat meat from outside then chicken or fish are your best bet as they're leaner

Yep, make a routine and stick to it! If you normally got up for work at 7 get up at 7.30. plan your day out, along with your food/meals. Find a workout that you enjoy and you're more likely to do it

You can leave the house to get food and for exercise as long as you keep your distance. In the UK we can do this so if you can then take walks or run!
