Yeah the gain was stupid. Last week I did a 7 day meal plan it was 40 carbs but didn't involve IF at all and lost 6lbs. I changed the diet up so I could skip dinner and do the 18/6 IF. When I did that I gained 1.2lbs then I gained 1.6lbs the next day and I'm eating the exact same food every day so the gain was crazy…

I've used Carbalose Flour in replacement of regular flour in pretty much any of the recipes I've found online and it fits more into low carb when you also replace sugars or higher carb milk etc...with the normal replacements. So you can try google for just normal pancake recipes and sup the flour with the Carbalose…

Those look great! Very close to what I've made and looks like you got the heat spot on. I've tired the walden farms syrup and it's actually pretty good if you don't mind Splenda. I prefer Stevia myself but I've not seen any syrups with it yet.

@JessicaLCH Yes I did find the batter very thick. I thinned it out a little with water and I added an extra egg. Made them much more manageable. A little thinner but I stacked two of them and still had only 4 carbs. Was very tasty. If you google CarbQuik pancakes you can find lots of different tweaks others have done.
