Yes, sugars should be a subset of the carbs listed. The problem is in WHO put those stats in and did they put them in correctly. I have found it can take a lot of searching to find submitted foods with the correct nutritional data.

Just find a regular recipe you like, then put everything into the MFP recipe log and figure out how much you can have to stay in your calorie goal. You could make some deplorable low-fat, faux-turkey, soy meatloaf that has a lot fewer calories, but whats the point when it tastes like warm garbage?

If the OP's log is saying 750 calories, then that won't show anything. This is almost certainly a case of underestimating food amounts, overestimating calorie burns, or a combination of the two.

MFP doesn't look at exercise calories when giving you that "not eating enough" warning. It's looking at the actual calories you said you eat that day.

Thats going to depend on how you feel. Do you feel like you could be doing more, going faster? Are you out of breath after each run interval? If you feel like you could be doing "more", then its time to increase some aspect.

50 pounds this year with running being about 90 - 95% of my exercise. The only way it's going to work for weight loss is to not eat back all the calories you burn on the runs. Pay attention to what your body is telling you and make sure you are eating enough protein so your body can heal after runs.
