I have arthritis in my knee, and am old enough now that all the other joints creak, too. I have a number of chronic conditions, so I know what it's like to try to fight through that to get motivated to exercise. I'd be happy to be one of your support buddies.

I can't do oats, but I use leftover quinoa the same way. If you add some Greek yogurt, it thickens up nicely.

I made quinoa in my Instant Pot today to add to my salads this week. Fast and easy. 8 minutes on manual, quick release at the beep.

I do them in bed because if I get down on the floor, I'm not getting back up. LOL Not ideal, but better than nothing.

Has a physical therapist taught you how to gently stretch the piriformis? I ask as a retired PT and as a person with chronic piriformis spasm. The stretches really help.

Change it up again. Used 2 Tbsp apple cider vinegar and 2 tsp of baking soda instead of the flax seed. Really made a big difference in the texture of the muffins. You wouldn't know they were gluten-free!

I have the Instant Pot. I got it to replace an older one that only did pressure/rice. Love making yogurt in it. And popcorn!

I made a pot roast in mine tonight. Just rubbed with spices. I mostly make those to turn around and use it for curry the next night.
