Late to the show here! Breakfast: bowl of cornflakes & unsweetened almond milk. Lunch: fried eggs & baked beans on toast. Dinner: pork and green bean curry, white rice. Snack: a homemade peanut butter oat "bar" that turned out as a pile of peanutty oats, but still tasted ok!

If you have low B12 but are eating a "good" diet sometimes the problem is that your body can't absorb the B12 properly - so in those cases it wouldn't matter how much you ate if your body was unable to use it... hence they give it via injection rather that tablet supplements. I'm a verrrrry slow runner and built up to doing 10k starting from using a similar plan to c25k, once i could do the 5k i was doing parkrun (erm, slowly!) Have you been advised to eat a low potassium diet for a medical condition? Your Dr should refer you to a registered dietician so you are aware of what to eat/avoid... there are lots of helpful sites such as the kidney foundation which give good info on low potassium foods as it's a bit of a minefield! I gave up chocolate for lent one year just because my sister bet me that I wouldn't be able to do it and I was determined to prove her wrong haha... don't think I had any weight loss though, as I probably fell into the trap of "oh i haven't had any chocolate so I'll eat this other fatty treat instead"!
