Companies aren't required to list potassium content on foods so many just don't. Due to this potassium content also often gets skipped out in the entries since folks don't have the information for it.

It sounds... terrible honestly there is one situation in which I'd do it and that would be trapped on an island with literally only potatoes available for any sort of nutrition. And even then I'd probably start experimenting with the relative edibility of sand.

Maybe starting by just using the stove to heat up soups from the can and the like would be a good start as opposed to trying to make things yourself right away. Other than that though I agree that following a basic cookbook or cooking classes would be a good idea for you - whether from a friend or the local uni.

I think it sounds more like a normal fluctuation from water retention or food in the gut honestly, as other posters have mentioned 0.6lbs is hardly anything. Not something OP needs to feel bad for just normal bodily function.
