I have to say, I started using thighs about a year ago and like them so much better than breasts. In addition to roasting, pan searing, or stuff like that, I also debone/skin mine for certain dishes (think indian tikka, chicken verde, etc). I save the bones and skin for bone broth.

Make stuffing for acorn squash or other dishes. Put them in scrambled eggs (replace your toast). Put them on soup (tomato, french onion), make croutons (from the bread crusts) with garlic and parm or cinnamon and sugar and eat them plain.
