I have the same problem. Weekends kill me. I to-do because I can lose a bit during the week...then weekend hits and I screw it all up

I do smoothies a lot for breakfast. Just whatever fruit you like, some greens, flax seed, water (or juice). They have vegan protein powders you can throw in.

Have you thought about meal prepping, so your food is already prepared when you get home. Or use a slow cooker and your food will be done when you get home. Make enough in the slow cooker to have left overs. Easy.

The easy go to is pasta. Lol. Just hop on Google and search for high protein vegan meals. Most Mexican food can easily be turned vegan. Tacos, burritos, burrito bowls, quesadillas, etc. I love beans, rice, and roasted sweet potato as a filling for Mexican food mmm
