Cooking for vegans tomorrow! Please help!

I love vegetables but my vegan recipes are limited. I need inspiration for a big, beautiful vegan dish to cook for friends tomorrow evening. I'd be very grateful for any suggestions. Filling and full of protein, preferably! I like one-pot stuff...

I made spiraled potatoes with homemade marinara sauce for vegan family members about a month ago. It turned out really nice for everyone, vegan and nonvegan. Good luck!0

The easy go to is pasta. Lol. Just hop on Google and search for high protein vegan meals. Most Mexican food can easily be turned vegan. Tacos, burritos, burrito bowls, quesadillas, etc. I love beans, rice, and roasted sweet potato as a filling for Mexican food mmm

Pastas and soups are probably the easiest. Curries are a bit more adventurous. I wouldn't try to do anything with tofu unless you're used to cooking with it. It can be difficult to learn how to prepare it so that it actually tastes good.
I'd suggest maybe spaghetti with premade vegan meatballs (frozen section) or Chickpea Noodle Soup (just like chicken noodle, except you use vegetable broth and canned chickpeas).1
