Great ideas here! Mexican is my go-to. Tonight was: -shrimp in tomatillo sauce -cauliflower rice (the frozen one from Trader Joes for around $1.99-- so much easier than ricing it yourself!) - black beans (in a salsa and chili seasoning sauce) - Lettuce and fresh tomatoes - Plain greek yogurt (in place of sour cream)
