Thanks! I made it with 40 grams of cheddar which was 157 calories. You could save a fair bit, but I really like my cheese! Definitely worth a try doing it without cheese, and it would still be delicious. It’s super flavorful.

No it’s not weird. One of my favorite breakfasts is leftover dinner. If I eat leftovers for breakfast, I usually eat a lighter dinner, like what I would normally eat for breakfast. It doesn’t matter when you eat, or what you eat, just how many calories total in a day. Enjoy!

I like some fat for breakfast, like nut butter or eggs, because it keeps me full longer. But if I wasn’t wanting fat, I’d probably eat fat free plain yogurt or cottage cheese, or put protein powder into a smoothie.

I put grated apple in while I cook mine, and add a little applesauce and cinnamon after. It tastes sweet but not too sweet. It’s really yummy.

One packet of plain microwave oatmeal with half a grated apple cooked in, 1/4 cup homemade applesauce, 30 g. cashew almond coconut butter and cinnamon. It’s so good and all the apple stuff really bulks it up to a nice sized bowl.

I eat a banana most mornings with peanut butter, or my newly discovered cashew almond coconut butter. I love it, it’s low calorie because I weigh the nut butter and banana, and it keeps me full, so it’s worth it for me. It’s worth it only if you enjoy eating it.

I made Arancini (risotto balls) for the first time and they were amazing! They have mozzarella in the middle. Served with a spinach salad with tomatoes and cucumbers out of my garden, olive oil and balsamic vinegar.

Veggie scramble with whole milk mozzarella, salsa, mushrooms, onion, zucchini, bell peppers, tomato and spinach. I sautéed the veg in kerrygold butter and the tomato, zucchini and pepper were from my garden, which made it extra delicious.

I might just get lunch at the store before shopping; either salad bar, or sushi depending on what store. If I wanted a snack, I might get some nuts from the bulk bin (and weigh out what I want to eat right then and there), or a string cheese. I wouldn’t let it derail me.
