My go to is a sort of shakshuka. Fry off some chilli, garlic, cumin and smoked paprika. Add onion and whatever veg needs using up. I've been pretty successful so far. Kind of been maintaining/minimally losing since Dec 2020. I'm comfortable that I will be able to maintain here indefinitely I want to give myself another month of losing to see if I can get a little lower.
