Not really low. A macro split that might help is 50% carbs, 20% protein, 30% fat. I believe this is the default macro split for mfp. I have been doing this split and I am losing weight and have plenty of energy. My personal experience.

Yes. Fasting so much makes it hard for your body to replenish the glycogen. Your body needs more fuel. And at this point it likely needs more rest. Hugs.

What are your typical activities at the gym? Do you do cardio? Aerobic excercise increases endorphins, so be sure to do cardio. Are there other activities you can add to your excercise routine, that you would like to try?

This could be the cause of a weight stall. Use a food scale and weigh all of your food accurately, then log it. Extra bites of food do add up in the long run.

Before my workout I eat a meal about 2hrs before my workout. This meal contains carbs, proteins fats. The carbs fuel my workouts, without them I bonk. After workout may be a protein bar or light lunch.

I am shooting for 60-90 mins of lap swimming. Depends how I feel at the 60min mark if I continue to go on from after the 60 minimum mark. I heart swimming.

Coffee can cause GERD if you drink too much at one time or drink it on an empty stomach. But stopping coffee suddenly can cause withdrawal headaches. Something to take into consideration as you try trouble shooting your eating plan issues.
