I usually have either avocado toast on homemade bread with cherry tomatoes and cheese crumbles or chia pudding. For the toast I use the Wholly Guacamole chunky avocado cups instead of fresh avocado since I never get around to eating the second half before it goes brown.

I aim for approximately 1800 calories per day. I'm female but very tall and have a heavy build. My ideal weight is somewhere between 160 and 180 (with 100 pounds to lose) and MFP initially gave me a calorie goal of 2400. Chia pudding. So easy to make. A cup of milk (I use dairy but you can also use nut milks) three tablespoons of chia seeds and a few drops of liquid stevia or other sweetener.
