  • I usually just stir it together - but sometimes I blend the same ingredients with coriander or cucumber as a raita style dressing or dip.
  • If you lay it out on a sheet pan it will cool more quickly, then you can pop it in the fridge to make sure it's really cold, then bag and secure well to freeze.
  • I love a huge salad with maybe prawns, tuna, roast chicken or feta cheese for some protein. My favourite dressing at the moment is non-fat greek yogurt mixed with black pepper, lemon juice and dijon mustard.
  • steamed white fish with a couple of cups of mixed vegetables (fresh or frozen), and topped with a sauce of quark, parsley, spring onions, green chili and black pepper. Delicious.
  • Baked white potatoes I eat the skins, baked sweet potatoes I don't but I do leave the skin on if I'm making home baked sweet potato fries. In New Zealand, in my hotel room, they served kiwi fruits in egg cups with a knife to slice it in half and then a teaspoon to scoop out the flesh - have eaten them that way ever since.
  • Pork and smoked paprika meatballs, spinach & mushrooms, baked cauliflower, and tomato & chili sauce.
  • Chicken fajita mix with peppers & onions, homemade salsa, wholemeal mini tortilla wrap, yogurt with spring onion and coriander, and roasted jalapenos.
  • Char-grilled pork loin fillet with rosemary, oregano and garlic, baked potato skins with yogurt & sriracha dip and salsa, and mixed salad.
  • Chargrilled chicken thighs marinaded in chili and paprika, baked chopped peppers, courgette & onion, and spinach stuffed mushrooms.
  • Ginger steamed salmon, mange tout, green & edamame beans, new potatoes, salad and lemon & yogurt dressing.
  • Lentil dhal with spinach, baked cauliflower with cumin and tumeric, char-grilled chicken thighs, and yogurt & coriander raita last night and thinking about having it again tonight as it was so delicious.
  • I would also suggest if you want to be super accurate that you try to weigh in grams rather than ounces if you can. I realise that's more a european way but it will help you truly know what you're eating. Good luck.
