Forget about sodium until your dr tells you otherwise. The recommendation is going to be changed because it is wrong. Should be about 1.5 times what it is. But, powerful lobbying is keeping it from being corrected. Low sodium can kill you. High sodium will make your ankles swell up.

I don't consider anything but calories. Having said that, since I am making food choices all day, every day, I find that calorie dense carbs are way down. I don't think about them at all, but I don't see a bowl of potato chips on my log. And, pasta is usually 2 oz. So, I guess you could call it a low carb diet.

Ignore sodium levels until your doctor tells you to reduce. Seriously. If your sodium intake is 3000mg and you go a couple of days of high perspiration or activity you can have dehydration - a serious medical problem.

I don't do any "cheat days." But, it does help me to know that while it takes a deficit of 3500 calories to lose a pound, it also takes a surplus of 3500 calories to gain a pound.

I usually count all that goes in the pan unless I see more than a tablespoon left in the pan. Then, I measure or estimate the oil to deduct at 120 calories per tbsp. Of course, meats that render out fat like bacon or burgers need to be weighed cooked not raw.

I had some vegan fudge. It had a little bit of a chalky texture, but that high cocoa homemade chocolate had a flavor I can't describe other than to say it was the tastiest fudge ever. The chef is a craft chocolate store person.

Sodium is your electrolyte. Without it you die. An excess might cause some water weight. A problem if you are recovering from heart surgery or have heart failure. Otherwise its absence can be an obstacle to enjoying your food choices.

Military MRE's have much better choices than above. They have high total calories but if you toss the cheese spread, the 250 calories drink mix and the carb (usually a bread or cake) there are really tasty entrees.
