Went out for Mexican last night. Chili verde (pork), refried beans, rice. So much food that I took home a little less than half and had it for brunch today with a fried egg.

American Wagyu patty, fries (air fried). Sauce for fries was Primal Kitchen chili lime mayo with a bit of apple cider vinegar to thin it out as usual. I hate the catchup that so many Americans use with their fries. Chopped salad w/capers, olives and queso fresco dressed with olive oil.

Chopped salad w/olives, capers and cherry tomatoes dressed with olive oil. Cheese & onion enchiladas with refried black beans. Our internet went out from last night until early this morning so I wasn't able to post Sundays miso/mushroom broth soup w/soba noodles, shiitake mushrooms and snow peas.

Breakfast tacos for dinner: scrambled eggs w/queso fresco and cherry tomatoes in corn tortillas. Added sour cream and Cholula green pepper sauce. Corn tortillas were from the freezer and were from otohe big bag we got at the little tortilleria a couple months ago. Still going strong.

We went to an English pub. I ordered the English Breakfast but it was nothing like what I've had in England but still OK for the US. Went out for dinner. This place has a limited menu with some weekly specials. Tuesday is pork chop day. They deep fry the pork chop. It was tender, juicy and flavorful. Served with fries. Also had banana pudding for dessert but I forgot to snap a photo.

Went out for happy hour (Mexican food place) and had papas locas. Fries with beef, shredded cheese, guac and sour cream. I ended up only eating about half of it. Reheated slow cooked leg of lamb from the freezer & mashed white potatoes (skin on) with lamb gravy (lamb juices pulled from freezer) and a Salad Starter (courtesy of Kroger) mediterranean salad dressed with olive oil.

Chilean sea bass and sea scallops with veggie medley sauté.

Went out for cajun food for lunch today: crawfish étouffé over rice, garlic bread and gater bites. Since that was fairly caloric dinner was light with a veggie salad with sliced almonds and a very small portion of brisket burnt ends pulled from the freezer.

@themedalist Here's a picture from a short hike last week. This isn't typical for us. Normally we walk the neighborhood or along a creek path in our downtown area. Next time I go on the path I'll take a photo or two.

Chicken thighs pan fried in butter with fresh thyme, pesto spaghetti with artichoke hearts.

Reverse seared steak finished with butter, garlic & thyme with pan fried potato, carrot & onion. After searing the steak we poured the remaining butter/herb mix over the vegetables. We also marinated the steak with a smoked whisk(e)y.
